I know, and I explained why and what to do to fix it. Now you will have to do it in Cakewalk but the principle is the same.
You need to understand this first. A MIDI file is a long line of information. If another patch change comes after the original patch change, that is the instrument you will hear.
So, this is what is happening. Let's pretend that this line is one track of your song, and you want to change the instrument sound. Lets say you want Electric Piano instead of RhodesPiano. OK?
Here is your midi files track:
RhodesPiano----------------------------------------
So you change piano to Electric Piano.
ElectricPiano-----------------------------------------
So why does the sound keep changing back to Rhodes Piano?
Because later on there is another patch change to Rhodes Piano, but YOU CANT SEE IT in the track view!
This is what it really looks like:
ElectricPiano--------------RhodesPiano---------------------------
You HAVE to change the patch that is occurring later on. The way to do that is to go into the event list and look for that patch change. It will be in the first or second bar. Change it there. I bet John has a tutorial on that somewhere. I can't tell you how to do it in Cakewalk because I don't have a copy installed.
